The Icelandic sheep stock is unique and has been raised sustainably since the time of the first settlers in 874. The lambs roam wild, drink mother’s milk and eat nutritious mountain vegetation. The result is wholesome meat that is renowned for its excellent flavour.

Hotel Edda has teamed up with the Icelandic Sheep FarmersAssociation for the summer of 2017. The talented chefs in our restaurants around the country have created new and exciting off-menu dishes based on Icelandic lamb, this most authentic raw material in the Icelandic culinary tradition.
